My Polish Kielbasa before I ate it!

From Michael Ruhlman and Brian Polcyn’s "Chartcuterie", modified to be all beef, with the addition of whole mustard seeds, stuffed into collagen casings and hot smoked on a kettle grill!

These sausages look and taste delicious, if I can do it anybody can!
